Coconut Creamsicle Gummies for Glowing Skin
Feb 28, 2022Have you ever… been tempted to pick up those gummy vitamins in the store that promise you glowing skin, strong nails, and long hair??
They probably taste delicious. And healthy skin - who doesn’t want that? But when you look at the ingredients, they are ALWAYS less than ideal. Something packed with so much sugar cannot possibly improve your health.
So, I decided to take matters into my own hands (and my own kitchen) and make my own delicious gummy snacks that will support healthy skin and a strong digestive system.
So, what is gelatin?
You may have already heard of collagen. Gelatin and collagen are very similar. Gelatin is a protein made from hydrolyzed collagen, meaning it is broken-down collagen. Collagen - the most abundant protein in mammals - is the main component of our connective tissue. So yeah, it’s pretty important.
Gelatin has a lot of the same health benefits that collagen is known for. Gelatin provides some of the essential amino acids that our bodies need, helps build strong connective tissue and cartilage, and plays a big role in elasticity.
Here are some of the greatest benefits of including gelatin/collagen in your diet:

Skin health: collagen gives our skin its supple, youthful appearance. As we age, we lose collagen. So, prioritizing collagen in our diet can reduce signs of aging and improve skin moisture.

Digestive and gut health: gelatin can support gut health by restoring a healthy mucosal lining in the stomach - we all know a healthy gut is a key to optimal health!

Joint pain: the collagen in gelatin can reduce joint pain caused by inflammation

Bone strength: gelatin contains the amino acid lysine which strengthens bones and supports the absorption of calcium

Sleep: another amino acid, glycine, may improve sleep quality when taken before bedtime
If you’re trying to reap the great benefits of gelatin and collagen, I highly encourage you to make bone broth and drink a cup daily or slow-cook cuts of meat with all of the bones and connective tissue intact.
But…
sometimes you need a sweet snack.
So get the best gelatin you can (quality matters here - look for 100% grass-fed), and make these gummies.
Ingredients:
Coconut layer:

3 tablespoons grass-fed gelatin
-
1/2 cup water
-
1 can coconut cream
-
½ teaspoon vanilla extract
Fruit layer

3 tablespoons gelatin
-
1/2 cup juice of choice (I like fresh squeezed lemon or orange)

1.5 cups coconut water (or regular water)
-
1 teaspoon fresh grated ginger (optional)

1 tablespoon raw, local honey (optional)
Directions:
Coconut layer

Sprinkle gelatin on top of the water to soften and bloom.

Heat coconut cream in a saucepan to a slow boil.

Add gelatin water mixture to the saucepan and cook on medium for 5 minutes. Remove from heat and stir in vanilla extract.

Pour into a silicone mold or 8×8-inch baking dish. Refrigerate until set (3-4 hours).
Fruit layer

Once the coconut layer has set, begin making the fruit layer by sprinkling gelatin on top of the coconut water to soften and bloom.

Combine the gelatin-coconut water mixture with juice, and ginger in a saucepan. Cook over low heat for 5 minutes, stirring gelatin to dissolve. Remove from heat and add in the honey.

Pour over the coconut layer. Refrigerate until set (3-4 hours).
If using a baking dish, once the layers are set, cut the gummies into desired sizes.
*Keep your gummies in an airtight container in the fridge for one week. Gummies without coconut milk will keep up to two weeks.
